Coming up with great meals is a challenge when you are at home, let alone out camping in your RV. Camping meals have their own set of issues - you either need minimal ingredients, or much of it needs to be prepped ahead of time.
What You'll Need
While each recipe is very specific about what you will need, but in all cases you will need the following.
- 6-quart Slow Cooker - I use a slow cooker with a locking lid for 2 reasons - one, I often plug it in outside, and I want to make sure that nothing can get into it, and two, I often plug it in while we are traveling down the road (securing it safely, of course)
- Slow Cooker Liners - I don't have a huge sink, and there is nothing worse than cleaning a slow cooker pot in a tiny sink - I always use these liners. If you search online, you can find all sorts of sizes to fit your crockpot.
- Whenever possible, pre-prep your ingredients in advance. For example, you can mix all your dry ingredients ahead of time and take in a gallon-sized plastic bag. This keeps you from packing too many ingredients, which take up valuable space!
- Double-check the recipe to make sure it will work with your size of crockpot.
Crockpot Chicken Recipes
Chicken recipes are a staple for sure. Here are a few deliciously easy slow cooker chicken recipes you might enjoy!
This is a creamy chicken fajita soup that is absolutely delicious. Most of the ingredients are cooking in the slow cooker and then when the chicken is cooked you add cheeses and melt in then add some cream and sour cream. This is a family favorite of ours!!
Only 6 ingredients - and you just add them all to the pot, turn it on and return 6 hours later - this is delicious and tastes amazing served over rice or pasta.

Crockpot Beef Recipes
Your camping crockpot meals have to include beef! From pot roast to corned beef, stroganoff, and even Philly cheesesteak sandwiches - you are sure to find the perfect and tastiest crockpot beef recipes here!
I love this recipe. I pre-prep this recipe before we leave in a plastic bag and then when we're on our trip I just add everything in the bag to the pot and slow cooker - that's it! Serve with rice or mashed potatoes.
Corned beef and cabbage in your crockpot are SUPER simple - just add all the ingredients to the pot and cook. This recipe doesn't call for potatoes, but you can certainly add to your crock if you have room.
Beef stroganoff is comfort food and literally the most popular recipe in my house. Most of the ingredients are cooked in the pot; then, when you're almost ready to serve, you add the cream cheese and sour cream to the pot. Serve over pasta or rice. Your family would be super happy if you made this...trust me.

Crockpot Pork Recipes

This pork carnitas recipe from Damned Delicious is super easy - dump it all in the crockpot. Once it's cooked, you shred the meat.
The recipe calls for roasting the shredded meat in the oven after, but you can skip this step. I would just shred, wrap in tortillas and eat...

Cooking breakfast overnight in your slow cooker is so much fun. First of all, if you're cooking something like french toast your RV will smell amazing!!
Even though all of these recipes are considered "breakfast" meals - there is nothing stopping you from having breakfast for dinner! (We do it all the time - my kids call it mixed up meal day)
